I think it makes things a little more dooable to try out one vegetarian meal per week, or even to go vegetarian for one day each week as you mentioned, especially if veggie cooking is a new thing for you or your family.

		<description>Thanks for this idea. Last year I had a goal to eat less meat. I decided to (#1) switch my one meat in the morning to a &quot;veggie meat&quot;. I eat five meals a day so I also wanted to (#2) go meatless for meal four. I never accomplished either. But, I like this idea much better. It seems to me that I will get a better balance and greater education with veggie meal prep if I aim for a full day each week.
